established in 2023 by chef aimee filippetti, toast + tonic breathes new life into olde mistick village with a combo of creative dishes, craft cocktails, and superb sweets baked in-house, giving people a place to gather with a focus on fresh, innovative ingredients, and dessert—always.

Aimee Filippeti / Co-Owner, Pastry Chef

Aimee Filippetti is a Mystic native and Culinary Institute of America grad who holds degrees in both Food Business Management and Advanced Baking & Pastry Arts. In 2020 Aimee launched Never Enough Bake Shop at the Ledyard Farmers Market before her crafty treats earned a cult following and she quickly outgrew her home kitchen. When the opportunity soon arose to purchase Mystic’s beloved Bleu Squid Cafe, Aimee saw a chance to expand and create something that reflected her unique tastes and talents. In 2023, toast + tonic creative kitchen was born. Aimee is excited to introduce diners old and new to her fresh concept, menu, and space while continuing Never Enough’s operations from a proper professional kitchen. In an endless effort to stay well-rounded, Aimee is also pursuing a Masters degree in Wine & Beverage.

Gail Filippetti / Co-Owner

Growing up in a household where Mom, Nana, and Grandma were all home bakers, Gail Filippetti was destined to find her way into the restaurant world. For 30 years she ran her own bookkeeping business, until 10/1/2020 when she became a restaurant owner (thanks to Aimee) and a Grammy (thanks to Oliver) on the same day. When she isn’t running operations at toast + tonic, Gail loves to travel, read fiction, collect cookbooks, and create whimsical watercolor paintings that you can find and purchase in our restaurant shop.
